Healthy Salmon and Vegetable Soup

This is a small variation of my usual salmon soup, with more vegetable varieties. It is a little different, but equally as delicious and healthy. And done in as little as 30 minutes.

Ingredients
  

  • 2 salmon fillets
  • 1 shallot
  • 2 garlic cloves
  • 1/2 leek
  • 1 red bell pepper
  • 3 medium sized carrots
  • 4 medium sized potatoes
  • A handful of spinach
  • 1 liter vegetable stock

Instructions
 

  • Finely dice shallots. Slice leek and carrots. Mince the garlic. Dice the pepper.
  • Start off by sautéing shallots and leeks on a medium heat. Add carrots, garlic and pepper.
  • Cook for a minute or two and than add in the stock.
  • Add sliced potatoes and cook until soften, 10-15 minutes. Add some dill as well.
  • In the end, add salmon cut into chunks and. Cook for additional 3-4 minutes. Add spinach as well. Season to taste and serve.
  • I like topping it with freshly cracked pepper, a little olive oil and fresh dill.
