Crispy Skin Chicken Thighs with Mushrooms and Sweet Potato Pure

Here is a super simple and delicious everyday lunch recipe made out of simple cupboard staples. Hope you try it and like it.

Ingredients
  

  • 2 sweet potatoes
  • 4 deboned chicken thighs + drumsticks
  • a couple of mushrooms
  • a couple of garlic cloves
  • 1 shallot
  • 100 ml chicken stock ½ cup
  • 2 tbsp butter

Instructions
 

  • Peel your sweet potatoes and cut them into bigger chunks. Let them cook or steam for the pure.
  • In the meantime, season your chicken with salt, pepper and paprika.
  • Heat you pan well and add a little oil. Sear the meat by placing it skin side down first. Let the skin become crispy and then turn it around. Add quartered mushrooms in, together with shallot, unpeeled garlic and a little thyme. Add chicken stock and place everything into the oven for about 15-20 min.
  • In the meantime, prepare the puree by blitzing it with a hand mixer or food processor. Add a little butter, salt and pepper.
