This was one great combination of flavors. All of the ingredients and flavors combined so beautifully and even though I don’t repeat recipes so often, I cannot wait to make this one again.
Ingredients for 3 servings:
3 salmon fillets
2 handfuls of broccoli stems
Kimchi
Jasmine rice
For the sauce:
2 cloves garlic
1 small piece of fresh ginger
3 tbsp soy sauce
1 tbsp rice wine vinegar
1 tsp honey
1 tsp Gochujang (Korean red pepper paste)
Mince ginger and garlic. Combine all the sauce ingredients except paprika paste.
Divide the sauce in two separate bowls and add paprika paste into one of those. Mix and set aside.
Prepare the rice by following package instructions.
Prepare the broccoli, season with salt and pepper, a little olive oil and roast on 200 deg C for about 10 minutes.
Then add fish fillets into the same roasting tray, cover them in 2/3 of prepared paprika sauce and roast for about 5 minutes. Use 1/3 of leftover sauce to coat the salmon again. Roast for a couple of minutes more.
Serve salmon and broccoli over some cooked rice, add kimchi on the side. Sprinkle with sesame seeds and scallions and drizzle with another half of the sauce (one without paprika). Enjoy! I sure did.
Roasted Sweet & Sour Salmon with Broccoli, Kimchi and Jasmine Rice
