This is a small variation of my old salmon soup. It is a little different, but equally as delicious. In this case I use more vegetable varieties. It is super good, healthy and done in under 30 minutes.
Finely dice shallots. Slice leek an carrots. Mince the garlic. Dice the pepper.
Start off by sautéing shallots and leeks on a medium heat. Add carrots, garlic and pepper.
Cook for a minute or two and than add in the stock.
Add sliced potatoes and cook until soften, 10-15 minutes. Add some dill as well.
In the end, add salmon cut into chunks and. Cook for additional 3-4 minutes. Add spinach as well. Season to taste and serve.
I like topping it with freshly cracked pepper, a little olive oil and fresh dill.
Healthy Salmon and Vegetable Soup

- 1 shallot
- 2 garlic cloves
- 1/2 leek
- 1 red bell pepper
- 3 medium sized carrots
- 4 medium sized potatoes
- A handful of spinach
- 1 liter vegetable stock
