Delicious Thai Shrimp Noodle Soup

This thai coconut soup is so spicy, sweet, comforting and delicious. And it is very quick to make. What else do you need?! Let’s get down to business!

For this lovely and comforting soup you will need the following ingredients:
250 g shrimps
3 cloves garlic
Fresh ginger (size of a finger)
2 smaller shallots
2 tbsp red curry paste
2 red bell peppers
1 can coconut milk
3 cups vegetable stock
a handful of spinach
+ rice or noodles for serving

Start off by cooking shrimps shortly on high heat and a little oil.
When done, set aside and add a little butter into the pan.

Sauté minced garlic and ginger and finely chopped shallots. Add cubed bell peppers. Add curry paste and cook shortly. Add coconut milk and stock. Cook for about 6-7 minutes and than add spinach and shrimps that you’re previously cooked.

Season to taste and serve with cooked basmati rice or noodles.
